We want to know how to pack and what to dress in the day and evening times while in the ship. We are traveling at the end of year – 12/31 to 01/04.
Ok. We want to know if, for example, on January 1st, is sun tanning and swiming in the pool doable or will it be cold – during the day and evening.
The outside temperature will be warm, at least in the 80′s but the inside of the ship is air conditioned. I’m comfortable in short sleeves at dinner but many wear long sleeves, especially the ones that are from Florida. During the day I wear shorts and tee shirts. At the show after dinner you may want a shawl or sweater.

Check the forecast for Galveston two or three days before you sail. You will depart late afternoon so dress for the forecast when you depart for the ship. Since it will be New Years eve you will probably want to spend time out on the deck. Since the ship will be traveling at near 20 MPH it will be windy so be prepared!
When you wake up you will be a couple hudred miles south and it will be warmer.
Check the forecast for Cozumel as well. It will probably be upper 70s to low 80s for high temps. You can get a free weather desktop at http://www.weather.com and view forecasts for up to 10 days.
